Start Early!! ********************************************************* DAYTON’S BLACK BEAN SOUP 1lb dried black beans 1/4 cup olive oil 3 yellow onions 4 cloves garlic 1 ham hock or meaty ham bone 1 1/2 tsp dried oregano 1 bay leafe 1/4 tsp curry powder 1 1/4 salt 1 1/2 tsp cumin 1/2 tsp tabasco 3/4 tsp ground pepper 3 TBSP parsley (chopped and divided) 10 cups water (or 1/2 water 1/2 beef broth) 1 red or green pepper 1 1/2 tsp lime juice 1 1/2 tsp brown sugar 3 TBSP Sherry (optional garnish: cheese, onion, sour cream, parsley) Wash and soak beans over night. Drain & combine next 11 ingredients (that's olive oil up to ground pepper). plus 1 TBSP parsley. Add liquid (water +beef broth) Simmer UNCOVERED 2-3 hour or until bean are tender. Puree 2 cups of beans return to pot. Remove hambone, cut up meat, return to pot. Stir in remaining parsley, green/red pepper, lime juice, brown sugar, sherry. Cook another 30 minutes. Stir loads. CORNBREAD 1 cup milk 1/4 cup butter, melted 1 egg 1 1/4cups yellow, white or blue cornmeal 1 cup all-purpose flour 1/2 cup sugar 1 TBSP baking powder 1/2 tsp salt Heat oven to 400F (200C). Grease bottom and sides of 9 inch round pan or 8 in square pan with oil, butter, or cooking spray. In one large bowl, beat milk, butter, and egg with a wire whisk. Stir in remaining ingredients all at once till flour is moistened (batter will be lumpy). Pour into pan. Bake 20-25 minutes or until golden brown and toothpick inserted in centre comes out clean. Serve warm.
